🥕 Vegetable Pulao Recipe (Serves 3–4)
📝 Ingredients:
Main:

Basmati rice – 1 cup (soaked for 20 minutes)

Mixed vegetables – 1.5 cups (carrot, beans, peas, potato, etc.)

Onion – 1 medium, sliced
-
Tomato – 1 small (optional), chopped
-
Ginger-garlic paste – 1 tsp

Green chili – 1, slit (optional)
Spices:

Bay leaf – 1
-
Cloves – 3
-
Green cardamom – 2
-
Cinnamon stick – 1 inch

Cumin seeds – 1 tsp
-
Turmeric powder – ¼ tsp
-
Garam masala – ½ tsp
-
Salt – to taste
Other:

Oil or ghee – 2 tbsp

Water – 2 cups

Fresh coriander & mint – for garnish

🔥 Cooking Steps:
1. Sauté Spices & Veggies

Heat oil or ghee in a pressure cooker or heavy-bottomed pan.

Add cumin seeds, bay leaf, cloves, cardamom, cinnamon – sauté for a few seconds.

Add sliced onion and green chili. Sauté until light golden.

Add ginger-garlic paste – fry for a minute.

Add chopped tomato (optional), cook till soft.

Add chopped vegetables, turmeric, salt, and garam masala. Mix well.

3. Cook the Pulao

In pressure cooker: Cover and cook for 1 whistle on medium flame, then turn off and let pressure release naturally.

In pot: Cover with lid and simmer on low heat until rice is cooked and water is absorbed (about 12–15 minutes).
