🥕 Vegetable Pulao Recipe (Serves 3–4)




📝 Ingredients:

Main:

  • Basmati rice – 1 cup (soaked for 20 minutes)

  • Mixed vegetables – 1.5 cups (carrot, beans, peas, potato, etc.)

  • Onion – 1 medium, sliced

  • Tomato – 1 small (optional), chopped

  • Ginger-garlic paste – 1 tsp

  • Green chili – 1, slit (optional)

Spices:

  • Bay leaf – 1

  • Cloves – 3

  • Green cardamom – 2

  • Cinnamon stick – 1 inch

  • Cumin seeds – 1 tsp

  • Turmeric powder – ¼ tsp

  • Garam masala – ½ tsp

  • Salt – to taste

Other:

  • Oil or ghee – 2 tbsp

  • Water – 2 cups

  • Fresh coriander & mint – for garnish


🔥 Cooking Steps:

1. Sauté Spices & Veggies

  1. Heat oil or ghee in a pressure cooker or heavy-bottomed pan.

  2. Add cumin seeds, bay leaf, cloves, cardamom, cinnamon – sauté for a few seconds.

  3. Add sliced onion and green chili. Sauté until light golden.

  4. Add ginger-garlic paste – fry for a minute.

  5. Add chopped tomato (optional), cook till soft.

  6. Add chopped vegetables, turmeric, salt, and garam masala. Mix well.

2. Add Rice & Water

  1. Drain soaked rice and add it to the pan.

  2. Gently mix so rice gets coated with the masala.

  3. Add 2 cups of water. Check for salt.

3. Cook the Pulao

  • In pressure cooker: Cover and cook for 1 whistle on medium flame, then turn off and let pressure release naturally.

  • In pot: Cover with lid and simmer on low heat until rice is cooked and water is absorbed (about 12–15 minutes).


🌿 Garnish & Serve

  • Fluff the rice gently with a fork.

  • Garnish with chopped coriander and mint leaves.


🍽️ Serving Suggestions:

Serve hot with:

  • Curd or raita

  • Pickle or papad

  • A light curry or dal (optional)
